Chocolate Covered Pretzel Quest Bar Cupcake
1 Chocolate Brownie Questbar
1 cup gluten-free pretzel sticks
1 Tbsp. stevia
1 Tbsp. coconut oil, melted.
2 tsp. honey
Preheat oven to 350 degrees F. Place 3 silicone cupcake liners sprayed with cooking spray in a cupcake pan.
Cut quest bar into 4 even pieces. Then, cut one of those pieces into 4 smaller pieces and set aside. Microwave the 3 larger quest bar pieces for 12 seconds and mold to the bottom of each of the cupcake liners.
Place pretzels in a food processor or magic bullet and pulse until desired consistency is reached. I prefer to have small pretzel chunks but you can blend the pretzels until a finer powder is formed. Pour blended pretzel in a bowl and add the stevia, honey, and coconut oil.
Evenly spoon pretzel mixture into each cupcake liner on top of the quest bar “crust”. Press down lightly with your fingers. Microwave the remainder of the 4 smaller quest bar pieces for 8 seconds and flatten with a rolling pin (spray that with cooking spray before using it). Lay flattened quest bar pieces in each cupcake liners, on top of the pretzel mixture. Press down lightly.
Bake in the oven for 8 minutes. Remove from oven and let cupcake liners sit in the pan for at least 30 minutes before removing the silicone liners. Once cooled, remove from liners, drizzle with coconutter, and sprinkle with any additional pretzel mix you have. Enjoy!
